Xanthan Gum is a polysaccharide with many uses and is commonly used as a food additive. It is a fine, white to cream colored solid, in the form of a powder. Xanthan Gum is used as a stabilizer and thickener in aqueous systems, which can increase viscosity, stabilize emulsions and contribute to suspensions and foams. It can also delay or prevent crystallization and stabilize oil emulsions in water. In foods, Xanthan Gum is common in salad dressings and sauces.
